Honey and Nectarine Cakes

I love trying to combine new flavours and come out with low fat recipes to share with you. I've been baking again and I'm really pleased with how this recipe turned out. It is also incredibly easy!

Honey and Nectarine Cakes
200g self raising flour
80g honey
75g margarine
2 eggs
2 nectarines

1. Peel the nectarines and slice the flesh into pieces.
2. Use either a hand blender or a food processor to purée the nectarines.



3. Combine all the ingredients including the puréed nectarines in a bowl and stir vigorously until fully mixed.
4. Place a heaped tablespoon of the mixture into each cake case.
5. Bake on a baking sheet near the top of a preheated oven at 175 degrees for about 20 minutes or until golden brown on top.



These turned out really well. The honey gives a sweet taste and there is a delicate tang from the nectarines. 


The recipe makes 18 small cakes and if you are following the Weightwatchers diet then you will be pleased to know that they are only 2 Smartpoints each.
