Asparagus in cheese sauce with NoodleSlim pasta

I fancied a lighter dinner last night and I've been toying with how to make a cheese sauce less fattening. This is what I came up with. If you don't like asparagus then you could use any type of green bean or Mangetout as that would work equally well.

Ingredients
100g asparagus tips
10g plain flour
1/4 pint skimmed milk
75g low fat grated cheese
1 clove of garlic (finely chopped)
1 tsp chargrilled red pepper paste
1 tsp paprika

Method
1. Mix the flour and milk in a pan and then heat until boiling.
2. Reduce the heat then add the cheese and stir until fully melted
3. Add the red pepper paste and paprika. Stir until combined.
4. Simmer the sauce and stir until it thickens.
5. In a griddle pan, fry the asparagus and garlic. You can use an ordinary frying pan but make sure you turn the asparagus so that it starts to blacken on all sides.
6. Remove the asparagus and garlic. Chop the asparagus into chunks

6. Stir the asparagus and garlic into the sauce.
7. Prepare the NoodleSlim pasta. You can use any type. I used Fettucine.
8. Add the pasta to the sauce and stir until it is fully covered.
9. Cook for another three minutes until the pasta is heated through. NoodleSlim pasta does not need to be cooked, just heated.

This was really filling. If you like spicy food then feel free to add more paprika. Adding chopped spicy sausages such as chorizos would also work well. This is only 10 weightwatchers Smartpoints so can easily fit into your daily allowance.

Let me know if you try it. Speak to you soon
